iced vanilla coffee


There’s nothing better than adding a dash of extra flavour to a classic favourite, especially if you love vanilla as much as me. This iced vanilla coffee was a perfect accompaniment to the gorgeous Brisbane weather that I was lucky enough to experience when I visited over the Easter break. Most definitely missing those sunny days now that I’m back in frosty cold Hobart.

le bon choix

La Rivale - gianduja and praline mousse surrounding a baked cheesecake centre.
Citron Meringuée - crusty shortcrust, zesty lemon curd and creamy meringue.
Lucie - a combination of coconut dacquiose and light strawberry mousse.

Jealous of the photos my friends were posting up of their purchases from Le Bon Choix, I finally made my way to this gorgeous French patisserie and bakery in Brisbane. Le Bon Choix translates to ‘the best choice’ and after sampling a handful of their delightful treats, I couldn’t agree more. I think more visits are on the agenda to ensure I try each and every item on their mouth-watering menu.

rose and strawberry


Having come across this delightful looking rose and strawberry parfait, I thought I’d give it a try. The recipe itself was quite straightforward to follow, and the only thing I did differently was to add some food colouring to get the rose mousse to a light pink colour. Unfortunately my rose mousse didn’t turn out quite as I expected in the way of consistency and taste. I’m not quite sure what I did wrong, but would love to hear from anyone who attempts this recipe and has a better end result. Regardless, the parfaits look quite pretty!

lemon tart


I remember years ago mixing up leftover lemon juice, sugar and some other random ingredients, and then pouring them into cases made of puff pastry in the hope of making my very own mini lemon tarts. They were inedible. So take two, I decided to use a proper recipe and one which used dough that was made from scratch for the shell of the tart. Obviously, it turned out way better than my first attempt. This tart definitely has the right amount of tang, a perfect consistency and a deliciously crumbly base and crust. I used a deeper pan than the recommended 2cm depth in the recipe, which made the tart look thin - so if you have a shallower pan definitely use it! The recipe can be found here.
